Today was my favorite holiday of the entire freaking year: Independence Day! Unfortunately, we’re not yet celebrating CANDIDA freedom, but soon 😉 I knew today was going to be filled with BBQs but overall actually felt OK about that, since I thought there probably would be compliant options (albeit perhaps light on the veggies).
I had tons of energy all day and felt phenomenal. A big part of this is probably that I’ve been really taking it easy these past few days since I haven’t been working…sleeping in (forcing myself to go back to sleep after I naturally wake up around 6 am) and easing into the day. It’s been gamechanging.
Another day of late-in-the-day eating…we’ll call it….brunch 🙂
Ate shortly before we left to go out (around 2 PM). Same dealio, but with smoked salmon this time. Eggs, avo, kale, onions, sauerkraut, and SMOKED SALMON. The smoked salmon definitely added something extra and fun. I’m a sucker for salt, and the smoked salmon definitely scratches that itch. I am, however, running short on avos which is definitely concerning… As soon as I wrote that sentence, it occurred to me that’s pretty much the definition of first world problems. Le sigh. Feeling grateful.
I went to a couple different parties that were both BBQ-ish, so didn’t have a single meal that was “dinner,” really, but a few different pitstops of food consumption. At the first party, they had bought a bunch of Roscoe’s Chicken & Waffles. Which yes, seems entirely non-compliant. I ended up first just eating collard greens and then ended up caving and eating some chicken (peeling off all the fried bits).
At the second, it was more of a proper BBQ. I ate more meat than I have in a long time… 1.5 burgers, 3 chicken drumsticks, probably at least 3 or 4 more pieces of chicken after that. Plus a bunch of spinach and some avo with lime and salt. It was definitely a scrounged together kind of meal, but ended up being pretty satisfying. And wait for it…. a small flub. 2 pieces of Hasselback potatoes. Those delicious thinly sliced potatoes….yeah. I honestly have no pictures of any of this. But here’s a couple pics of the scenery 🙂
How’d I Do?
Pretty well again I think, all things considered. Starting to feel better about everything. Being gentler on myself (not really even leaving the house until late afternoon), taking things slower. Not pushing so hard. And what do you know, I have way more energy! I do also feel like I’m settling into the diet. I’m a little worried about how heavy my meat consumption has been, but I’ll pare back during the week.
